Banana oat cookies
Soft banana-oat cookies with peanut butter and cinnamon.

Ripe banana and peanut butter bind these soft oat cookies without flour or a separate sweetener. The oats stay visible, and the centers remain chewy after cooling. Twelve small cookies make six snack portions, so shaping the batch evenly is useful if you plan to pack them over several days.
Bananas supply the moisture
Choose bananas that mash easily with a fork. Brown speckles on the peel are useful, but the fruit should still smell fresh and show no mold. Mash until large lumps have gone before stirring in the peanut butter. Large pieces of banana make it harder to distribute moisture through the oats, leaving some cookies wetter than others.
Weigh the banana after peeling. Banana sizes vary enough that counting fruit alone can change the mixture. A very large banana is not a reason to add it all: save the extra for another meal. The short rest after mixing lets the oats take up some moisture before you shape them.
Rolled oats give a coarse, chewy texture. Quick oats make a finer cookie because their pieces are smaller. Steel-cut oats need a different preparation and are not a direct swap in this short bake. Smooth peanut butter is easiest to distribute; stir separated oil back into the jar before measuring.
Flatten each cookie before baking
These cookies keep roughly the shape you give them. Press the mounds to the stated thickness so heat can reach the center while the edges color. Keeping each mound similar in size also makes the finished portions easier to judge. Leave a little room between them so you can lift them without tearing the soft edges.
Check the centers as well as the color. Banana can keep the middle soft even when the outside looks done. The cookies should look set rather than wet on top. Let them cool on the pan before moving them; hot oats and banana are fragile, and the cookies become easier to handle as they lose heat.
A snack batch with little waste
This is a useful place for ripe bananas and the last spoonfuls of a jar of peanut butter. Keep the cinnamon modest enough that the banana still comes through. If you use sunflower seed butter, expect its flavor to be noticeable, and check its label if avoiding peanuts for an allergy.
Cool the cookies promptly, refrigerate in a covered container within two hours, and use within three days. They stay soft in storage. Pack two together for the listed snack portion, placing parchment between layers if they stick. Cooling completely before closing the lid also limits condensation that would make the surfaces damp.
