Small golden banana oat pancakes with chickpea flour on a ceramic plate

These banana oat pancakes are cooked as small rounds, with blended oats making up most of the flour. Banana supplies sweetness, while a modest amount of chickpea flour helps the soft oat batter hold together in the pan. The batch makes two breakfast portions, with six small pancakes on each plate.

Grind the oats before adding liquid

Begin with dry rolled oats and blend until they look flour-like, with few obvious flakes. Add the banana and soy milk only after that first grinding stage. Large oat pieces are harder to reduce once the mixture becomes thick, and they can leave a coarse patch inside an otherwise soft pancake. Stop the machine before scraping around its blades.

Weigh the banana after peeling. A large banana can supply much more flesh than the amount intended, adding moisture and changing how the pancakes spread. Use ripe fruit that mashes easily. Whisk the chickpea flour and other dry ingredients separately so baking powder and salt do not remain in concentrated pockets when the blended mixture goes in.

The ten-minute rest belongs in the preparation plan. Oat batter thickens as it stands, so stir after the rest before judging how much to scoop. Keep the measured flour amounts consistent rather than adding handfuls of oats to an already rested batter.

Cook small rounds over moderate heat

Use one quarter of the batter for each batch of three pancakes. Spread them into rounds about 9 cm across, leaving enough room for a spatula between them. A deep mound takes longer to set inside while its banana-containing surface browns. Medium-low heat gives the center time to cook before the outside becomes too dark.

Allow about six minutes per batch, plus warming and handling time across all four batches. Flip once the first side holds together, then give the second side its full cook. Split a pancake from the first batch to check for a set center; surface color alone is not enough. The FDA advises against eating raw flour or batter, so do not taste the mixture to check it. Lower the heat and extend cooking if wet paste remains.

Choose milk and plan saved portions

Use plain unsweetened soy milk. The FDA explains that plant drinks differ in protein and added nutrients, so a different drink will change the estimate even at the same volume. These portions are defined as six small pancakes; extra toppings are separate.

Cool saved pancakes in a single layer before stacking them in a shallow container. Refrigerate promptly and use within three days, consistent with Health Canada’s leftover guidance. Reheat the portion needed rather than repeatedly warming the whole batch. Keeping the pancakes small also makes it easier to heat their centers without drying the edges.

Storage & reheating

Cool pancakes in a single layer and refrigerate in a shallow container within 2 hours. Keep covered for up to 3 days. Reheat only the portion needed, checking for 74°C / 165°F throughout. Freeze cooled pancakes separated in a covered container if keeping longer, thaw in the refrigerator, and reheat thoroughly.

Substitutions

  • Use another plain unsweetened soy milk at the same volume; check its ingredients and nutrition label.

Cooking notes

  • When scaling, keep the pancakes small and allow extra pan batches and cooking time.

Contains: soy. Check the labels of your ingredients.
