Cocoa peanut stovetop oats
Warm cocoa oats with soy milk and peanut butter.

Unsweetened cocoa and peanut butter make these oats rich enough for a large breakfast bowl. The cocoa is mixed smooth before the oats enter the pan, then the peanut butter goes in near the end. That order keeps dry cocoa pockets out of the finished porridge and makes stirring easier.
Start with a smooth cocoa mixture
Put the cocoa in the saucepan and work in a little soy milk first. A small amount of liquid lets you press out dry lumps with the whisk before adding the rest. If all the milk goes in at once, dry cocoa can float on the surface and take longer to mix through.
Use plain unsweetened cocoa powder. A sweetened drinking-chocolate mix changes the balance of the bowl and can contain milk ingredients. The maple syrup in this recipe is measured separately, so the cocoa itself can stay unsweetened.
Rolled oats keep some texture after the short simmer. Stir often enough to move the flakes away from the bottom, especially around the edge of the saucepan. A gentle bubble is enough. Boiling vigorously can send thick oats up the sides of a small pan while the bottom begins to stick.
Add peanut butter after the oats soften
Stir any separated oil back into the peanut butter before measuring. Once the oats are soft, lower the heat and fold in the peanut butter until no pale streaks remain. It thickens the mixture, so scrape the base gently with each stir during the final minute.
Judge the texture after the short rest in the bowls. Oats that look slightly loose in the pan can become thicker while you carry breakfast to the table. If they are already stiff, a small splash of the same soy milk will loosen them more evenly than trying to stir a cold spoonful of peanut butter into each bowl.
Soy milk contributes to the recipe’s nutrition as well as supplying liquid. If you substitute another plant drink, compare its protein and added sugar on the label. The FDA’s guide to plant beverages explains why different cartons are not nutritionally interchangeable.
Reheat one bowl at a time
The recipe makes two large portions. For a smaller household, portion the cooked oats into shallow containers and refrigerate within two hours. Keep covered and use within three days. They will be firmer after chilling.
Add a splash of water or the chosen plant milk when reheating, then stir thoroughly and heat until steaming throughout. Quick oats can replace rolled oats if you follow their shorter cooking time. Smooth sunflower seed butter is another listed option, with its own flavor and nutritional profile.
