Peanut banana overnight oats served ready to eat

Peanut butter, soy milk and chia turn rolled oats into a thick breakfast that can be mixed the night before. The banana stays separate until morning, keeping the slices firmer and the jars easier to prepare ahead. This is a substantial two-portion batch, so use containers with room to stir.

Disperse the peanut butter first

If the peanut butter has separated in its jar, stir it thoroughly before measuring. A spoonful of oily peanut butter and a spoonful from the dry bottom of the jar will behave differently in the milk. Smooth, evenly mixed peanut butter is easier to whisk into a consistent base.

Whisk it with the soy milk before adding the oats and chia. Press any remaining lumps against the side of the bowl, then stir through the dry ingredients. The second stir after five minutes is useful: chia that has gathered in one spot can become a dense lump while other parts of the jar stay loose.

Rolled oats suit the stated overnight rest. Steel-cut oats remain much firmer and need a different preparation; instant oatmeal packets may also bring added flavors and sweeteners. A plain bag of rolled oats gives you a repeatable starting point.

Understand what sets the texture

The oats soften while chia absorbs liquid and thickens the mixture. Give the jars the full refrigerated rest before judging the final texture. A mixture that looks loose just after stirring is not a reason to add more dry ingredients immediately.

NIH lists chia seeds among plant food sources of omega-3 fats. Here they also have a practical role in thickening the breakfast. They are part of the measured recipe, rather than an optional garnish scattered on top at serving.

Keep the unsweetened soy milk if you want the recipe to match its listed ingredients closely. Other plant drinks can differ in protein, flavor and thickness, so a swap will affect more than the name on the carton. If you add extra liquid in the morning, stir it into one serving a little at a time and count it separately.

Add fruit when you eat

Slice the banana shortly before serving and divide it between the two portions. This also lets you use the ripeness you prefer: a firmer banana gives distinct slices, while a very ripe one blends more readily into the oats.

Keep the jars covered in the refrigerator and use within three days. For a carried breakfast, keep them chilled during the journey. Frozen berries are the suggested alternative to banana and can be mixed in before chilling; expect their thawed juices to color and loosen the surrounding oats.
