Thin apple slices soften beneath an oat topping held together with peanut butter and maple syrup. The topping forms small clusters rather than a solid lid, leaving room for fruit juices to bubble underneath. This batch makes six spoonable snack or dessert portions, with cinnamon shared between the apples and oats.
Cut the fruit before mixing the topping
Core the apples, then weigh the edible slices. Leave sound, washed skin on so the stated weight matches the ingredient reference. Similar 5 mm slices cook more evenly than a mixture of thin slivers and thick wedges. Spread them across the dish with the measured water, lemon juice, and half the cinnamon before making the topping.
A firm eating apple gives more distinct pieces after baking. Softer apples can collapse further and release their juice sooner; neither result requires adding flour to the filling automatically. Check tenderness with the tip of a knife near the end of baking, reaching a slice in the middle of the dish. Brown oats on top do not tell you whether the fruit beneath has finished cooking.
Make small oat clusters
Stir the peanut butter jar thoroughly before weighing. Natural peanut butter often separates into oil above a firmer layer, and taking only one part changes how the topping holds together. Combine it with the syrup, oil, salt, and remaining cinnamon before folding in the oats. That sequence coats more flakes evenly than trying to stir a thick spoonful of peanut butter through a bowl of dry oats.
Scatter the mixture over the apples with a few open spaces. A compressed sheet traps more steam and makes the topping harder to spoon through. Small clusters leave exposed edges that can brown, while very large lumps may stay dense inside. Watch the topping as the fruit finishes; a loose foil cover protects it if the oats and peanut butter darken too quickly.
Portion the finished dessert deliberately
Maple syrup adds sweetness as well as flavor. The FDA includes sugars from syrups within added sugars, so using maple syrup does not make the crumble sugar-free. Smooth unsweetened peanut butter keeps an additional sweetened ingredient out of the topping, but it remains a peanut-containing recipe. A seed butter substitution needs its own ingredient and allergen check.
Give the dish its short rest before serving so the fruit juices settle around the slices. Divide it into six portions rather than treating the whole pan as a few large breakfast servings. Refrigerate what you save promptly. The topping softens over chilled fruit, so an oven reheat gives it a better chance to dry again than a covered microwave. Keep any plant yogurt or other accompaniment separate and count it as an addition to the recipe.

Storage & reheating
Cool and refrigerate within 2 hours. Keep covered for up to 3 days. Eat chilled or reheat only the portion needed until steaming hot throughout; oven reheating helps the topping dry again.
Substitutions
- Smooth sunflower seed butter can replace peanut butter; check ingredients and allergens and expect different nutrition.
- Pears can replace apples, although softer fruit may cook faster and release more liquid.
