Peanut oat bites served ready to eat

These small oat bites use peanut butter as their binder, with maple syrup for sweetness and a little water for the oats and chia. The short rest before shaping matters as much as the mixing. Twelve bites make six snack portions, so two bites are the serving used in the recipe calculations.

Start with evenly mixed peanut butter

Stir a separated jar of natural peanut butter before weighing out the recipe amount. The oil needs to be mixed back into the thicker paste at the bottom. Otherwise the first few spoonfuls can make an oily mixture while the last ones leave dry oats that will not hold together.

Mix the peanut butter, syrup and measured water until smooth before adding anything dry. Scrape around the bowl and underneath the spoon so no streaks of plain peanut butter remain. Once the oats and chia go in, fold from the bottom until the cinnamon is distributed and every part of the mixture has some moisture.

Plain rolled oats provide a noticeable chew. Quick oats, the alternative in the card, make a finer and softer bite. Steel-cut oats are not an equivalent swap in this uncooked preparation because their pieces remain much harder.

Let the mixture rest before adjusting it

Leave the bowl for the stated ten minutes before deciding whether it is too loose. The oats and chia need that time to take up some of the liquid. Adding a handful of extra oats immediately can leave the finished bites drier than intended.

Test a small amount by pressing it firmly between clean hands. It should hold together when compressed, even if it does not roll like a smooth dough. If it seems crumbly, try pressing more firmly first, following the method in the card. Pouring in a large amount of water makes the mixture harder to portion and changes the intended texture.

Divide into twelve roughly equal pieces before shaping, then compare their sizes on the tray or in the container. This is easier than finishing eleven large bites and discovering that only a small spoonful remains for the last one.

Keep snack portions ready in the refrigerator

Chill the shaped bites in a covered container for at least thirty minutes. Pack them so they can be lifted out without being crushed together; a small piece of baking parchment between layers can help. Store them chilled and use within the three-day limit in the card.

Sunflower seed butter can replace peanut butter, though its flavor and consistency will be different. Check the replacement’s ingredients and allergen information rather than assuming every seed butter is suitable for every person. The nutrition and cost shown for the original peanut version will also change.
