Coarse roasted cauliflower and white bean mash in a plum-colored bowl

Roasted cauliflower brings browned edges to this coarse white bean mash. The beans warm with garlic while the cauliflower finishes in the oven, then everything is crushed together with olive oil and lemon. The result is a substantial side with small vegetable pieces and a soft bean base.

Roast the cauliflower until the stems soften

Cut the cauliflower into small florets and include the tender part of the stalk, trimmed and sliced thinly. Similar sizes help the pieces finish together. Spread them across the tray so the cut faces have contact with the hot surface and steam can escape between them.

Some browning gives the mash its roasted flavor, but the center of a thicker stem also needs to soften. Test it with a fork before taking the tray out. If the tips color while the stems remain firm, move the darker pieces away from the hottest edge and give the thicker ones more time.

Keep the cauliflower’s browned pieces when transferring it to the bowl. They make darker flecks in the finished mash. This is a useful dish for a partial cauliflower head because the final pieces will be crushed anyway; a uniform decorative shape is unnecessary.

Warm the beans before mashing

Use cooked white beans and weigh them after draining. The recipe’s quantity is edible bean weight, rather than the net contents printed on a can. Cannellini, navy and great northern beans can all be used, with some difference in firmness and flavor.

A covered saucepan warms the beans and garlic in a measured amount of water while the cauliflower roasts. Keep the heat gentle and stir so the bottom stays wet. The garlic should soften before the bean mixture joins the cauliflower; raw pieces would remain noticeable in the mash.

Crush the cauliflower first with a potato masher, then add the warm beans and their liquid in stages. A wooden spoon helps fold the mixture back toward the center of the bowl. Stop when the pieces are the size you want, and stir in lemon at the end. Adding all the liquid gradually gives you control over the consistency without needing cream or a blender.

Portion and reheat the mash gently

Divide the batch into four side portions. Save leftovers in shallow containers and refrigerate within two hours. FoodSafety.gov advises refrigerating leftovers promptly in small portions; this recipe uses a three-day refrigerated storage limit.

The beans will make the mash firmer after chilling. Stir in a small splash of water during reheating if it no longer moves easily around the pan. Reheat until the whole portion reaches 74°C / 165°F, stirring from the bottom so the middle heats along with the edges. Keep the heat moderate enough to avoid a dry layer forming underneath.
