Smoky roasted chickpeas
Oven-roasted chickpeas with smoked paprika and cumin.

Cooked chickpeas turn into a savory snack with a long enough roast and a dry surface. Seasoning near the end keeps the paprika from scorching. Expect a crisp outside and a firmer center; chickpeas from different cans can dry at different rates.
Remove water before adding oil
Spread the drained, rinsed chickpeas on a clean towel and pat them thoroughly. Roll them gently under the towel to reach the damp surfaces between the beans. Loose skins can be removed as you go, but there is no need to peel every chickpea. The useful goal is a dry surface before the measured oil and salt go on.
Use a sheet pan large enough for one layer with spaces between the chickpeas. A crowded pile traps moisture and leaves some beans sheltered from the oven’s heat. Shake the pan during roasting so the same side does not stay against the hot metal throughout. Chickpeas near an edge can dry sooner than those in the middle, making that movement useful even in an evenly heated oven.
Add paprika near the finish
The chickpeas need their longer roast before the paprika and cumin are added. The spices only get a brief return to the oven, which lets them coat the warm oil without spending the full cooking time exposed to heat. Have a spoon or spatula ready for tossing, and watch closely during those final minutes. Darkening spices can quickly shift from smoky to bitter.
Check a chickpea after it has cooled enough to handle, since the texture of a hot surface can be misleading. The outside should feel dry, with a firmer center. Different brands start with different levels of softness, so the stated roasting window is a guide alongside those signs. More oil cannot compensate for a wet center or an overcrowded tray.
Keep the batch useful after roasting
Smoked paprika supplies the main smoky flavor, so ordinary sweet paprika will give a milder result. Chili powder is another option, though blends vary in heat and added salt. White beans are too fragile for a direct swap here; their softer texture is better suited to a mash or dip.
Divide the batch into four portions after its short cooling period. Leftovers still need refrigeration; a dry-looking surface does not establish that home-roasted chickpeas are shelf-stable. Follow the FDA’s two-hour rule for perishable food. Refrigeration softens the crust, so reheat a portion spread out on a tray to help it dry again. For the crispest snack, plan to eat most of the batch on roasting day.
