This air fryer asparagus is a lemon-and-garlic vegetable side for two. A small, uncrowded layer lets the spears brown while their stalks stay crisp-tender. Weigh the asparagus after removing woody ends, keep checking the basket during cooking and add the lemon juice at the end.
Trim first, then weigh
A bunch is a purchase unit, not a reliable recipe measure. Stalk length, thickness and woody ends all affect how much usable asparagus you bring home. Iowa State Extension recommends washing asparagus and removing woody stems before use. Rinse under running water and dry with a clean towel; FDA produce guidance advises against soap or produce washes.
The original batch uses 250 g after trimming. It makes two sides from 125 g raw edible asparagus each. Cut unusually long spears to fit the basket rather than folding them into a pile. Keep the prepared weight separate from the weight on the grocery receipt.
Let tenderness set the finish
Ninja’s AF100 guide gives whole trimmed asparagus a guide time of 8–12 minutes at 200°C, with a three-minute preheat. Its bunch has no stated gram weight. This recipe uses a defined 250 g input and starts checks at four minutes, so thin stalks or small loads can come out earlier.
Use the crisper plate and leave room between spears. A basket’s litre rating does not tell you its flat cooking area. If your asparagus needs two loads, cook them separately and include the extra time in dinner planning. Check the thickest stalks for crisp tenderness; browned tips alone do not tell you whether the lower stalks are ready.
Count the portion and the oil
The USDA raw-food reference supplies the asparagus values used here. The estimate starts with raw edible grams and includes all the measured oil, lemon and seasonings. Cooking changes water content, so half the finished batch need not weigh 125 g.
This is a vegetable side, with its own modest protein contribution. Add a separate main meal rather than treating the side as a protein target. Our guide to plant-based protein portions can help with the rest of the plate. Measure the oil: a free pour changes energy and cost without changing how much asparagus is present.
Compare usable cost and save leftovers safely
The costing uses the USDA Food Buying Guide’s 53% trimmed-raw yield as a disclosed purchasing proxy. It is not a measurement of your bunch; the guide’s cooked yield is different. Regional prices are snapshots, and asparagus can be expensive. Compare the usable amount before buying; our broccoli side is another dinner option.
For leftovers, Utah State Extension advises prompt refrigeration, three to four days of refrigerated storage and reheating to 165°F. This card uses three days. Follow its reheating checks or serve properly stored asparagus chilled. The food-budget and storage guide covers planning portions you will use.

Storage & reheating
Refrigerate promptly in shallow covered containers within 2 hours (1 hour above 32°C / 90°F), at 4°C / 40°F or below. Use within 3 days; the spears may soften. Serve chilled, or reheat only the needed portion in a covered, vented microwave-safe dish, turning midway and allowing standing time. Verify 74°C / 165°F throughout with a suitable thin-tip thermometer whose sensing area fits inside the stalk; follow its instructions. Do not take a reading between spears. If the probe cannot measure them reliably, serve the properly stored leftovers chilled.
Substitutions
- For a plainer side, omit the garlic powder; the default estimates include it.
- Use plain garlic powder. Garlic salt or a salted seasoning blend changes the sodium and needs a separate salt adjustment.
- Frozen or canned asparagus has a different preparation and moisture level; this method and its raw-weight estimates are for fresh asparagus.
Cooking notes
- The timing allows one original-size load plus 3 minutes of preheating. If the spears do not fit without overlap, use more loads; allow about 8–12 minutes for each extra load and check every load. Basket footprint and spear thickness matter more than advertised litre capacity.
- Serving controls scale ingredients and cost. The times, temperatures and fixed quantities in the instructions describe the original two side servings; larger batches need more cooking time, while smaller loads can finish sooner.
- About 8¾ mass ounces corresponds to the original 250 g raw trimmed input; this is not a fluid-ounce, cup, spear-count or cooked-weight measure. All measured oil and lemon juice count in the estimates. Small original weights are garlic powder 0.8 g, salt 0.75 g and pepper 0.3 g.
