Edamame soba salad served ready to eat

This cold noodle salad combines shelled edamame with cabbage and carrot in a sesame-lime dressing. The beans and noodles use the same saucepan in sequence. A thorough rinse and drain leaves the soba easier to toss, while finely cut vegetables add crunch without making the strands difficult to eat.

Choose noodles for a cold salad

Soba varies in its balance of wheat and buckwheat, so follow the cooking time on the packet. The name alone does not mean the noodles are gluten-free. Check for wheat and choose plain noodles without egg, as specified in the recipe. Different brands can also soften at different speeds.

Cook the edamame first and lift it out before adding noodles to the same water. Have the colander ready before the soba finishes, because leaving the strands in hot water while you organize the sink gives them more cooking time. Taste a strand near the end of the package timing.

Rinse the drained noodles under cold water, moving them gently with your fingers or tongs until they are cool. This washes away surface starch that would otherwise gather between the strands as they chill. Drain thoroughly afterward. Water trapped in a loose bundle can dilute the dressing even when the outside looks drained.

Cut the vegetables so every forkful works

Shred the cabbage finely across its leaves and grate the carrot. Thick cabbage pieces can be awkward to mix into long noodles and may end up in a separate pile at the bottom of the bowl. Short, thin strips travel with the strands and spread their crunch through the salad.

Use shelled edamame so the measured beans are entirely edible. Follow the bag’s cooking instructions before cooling them. Spreading the cooked beans on a plate helps release steam while the noodles cook.

Whisk the soy sauce, lime, ginger and sesame oil together before adding the noodles. Finely grated ginger distributes more easily than thick pieces. Toss while lifting the strands from underneath so the dressing reaches the whole bundle without tearing it into small pieces.

Keep the lunch box easy to stir

Divide the salad into two shallow containers and refrigerate promptly. Use within three days and keep cold until eating. Noodles can clump in the refrigerator; a small splash of water and a gentle toss will loosen them without needing another full batch of dressing.

Pack the salad with enough space above it to stir. Cucumber can replace cabbage as listed, giving a softer, juicier result. Rice noodles are another option, with a different cooking method and texture, so use their package instructions rather than the soba timing.
