Lemon tahini hummus is a cold chickpea dip with a little cumin and raw garlic. The olive oil is blended into the batch, so each small portion has the same seasoning. It is ready after a short refrigerator rest.
Start with drained chickpeas
Choose cans labelled ready to eat. Their packing liquid is not part of this recipe; draining it keeps the measured water in control of the dip’s consistency. Use all the chickpeas from the two standard cans. Different brands have different drained weights, so about 500 g is a guide to the amount needed.
Chickpeas contribute plant protein and fiber. At this snack-size yield, the chickpeas share each portion with tahini, lemon, and water. The nutrition estimate covers the hummus itself; bread or vegetables added alongside it have their own portions and costs.
Tahini is sesame paste. Stir any separated oil back into the jar before measuring so the spoonfuls have a consistent texture. This recipe contains sesame; check packaging for any additional allergens before serving it to someone with an allergy.
Blend in stages for an even texture
The tahini goes into the processor with lemon, garlic, and half the water first. This smaller mixture gives the blade a chance to break up the garlic before the chickpeas fill the bowl. Mince the clove first: a piece caught above the blade can survive a brief blend.
After adding the chickpeas, stop the processor to scrape down the sides and move any mixture sitting above the blade. Keep the machine switched off while the spatula is in the bowl. A few extra blending intervals can help when the dip looks grainy; follow the processor’s limits on continuous running.
The remaining water goes in gradually to loosen the paste without leaving a puddle around it. Use the measured amount before judging the consistency. Canned chickpeas vary in firmness, so check for a smooth, spreadable texture rather than relying only on the clock. The short rest takes place in the refrigerator.
Keep snack portions cold
Pack the hummus in small containers if you plan to eat it over several days. This makes it easier to take out one portion while leaving the rest chilled. Health Canada advises using refrigerated leftovers within two to three days; the card uses a three-day limit. Keep it at 4°C / 40°F or below, following the FDA’s cold-storage guidance.
For a packed snack, use an insulated bag with an ice pack, then put the container in a refrigerator when one is available. At home, spoon a serving into a separate bowl and return the main container to the fridge. Keep the dip plain as written; the measured olive oil is already blended in, so an extra oil topping is unnecessary.
