Finely chopped walnuts add small chewy pieces to a tomato sauce built around brown lentils. Carrot and onion soften into the base, while the lentils remain visible. The sauce is thick enough to cling to spaghetti, and the batch divides into three generous dinners.

Cut the sauce ingredients to match

Chop the walnuts into small pieces rather than grinding them into a paste. Large chunks can dominate a mouthful; a fine, uneven chop spreads them through the sauce. Use a similar small dice for the carrot and onion so they soften during the stated skillet time.

Keep the vegetables over medium heat and stir often enough to prevent the onion from catching. They should begin to soften before the garlic and oregano go in. The tomatoes then supply the moisture for the gentle simmer. Crushed tomatoes make a more cohesive coating than large, firm tomato pieces, although the latter can be broken up with a spoon.

Cook the brown lentils separately and check that their centers are tender before adding them to the sauce. The final five minutes together are for bringing the components together, rather than finishing a batch of hard lentils. Drain well so their cooking water does not thin the tomatoes unexpectedly.

Use walnuts where their texture matters

The recipe uses a modest amount of walnuts across the whole batch. Their purpose is to enrich the sauce and add texture alongside the lentils. NIH lists walnuts among food sources of omega-3 fats.

Walnut pieces can be more convenient than intact halves for this dish, since they are being chopped anyway. Compare their package price by weight and buy an amount you can use before it loses freshness. Keep the rest sealed according to the package directions.

Sunflower seeds are the suggested alternative when walnuts are unsuitable, but they bring a different flavor and texture. Check the replacement’s label and keep in mind that the displayed nutrition is based on the original ingredients.

Finish the pasta and plan leftovers

Use the spaghetti package timing rather than assuming every whole-wheat pasta cooks at the same speed. When draining, keep the sauce ready so the strands can be tossed or plated promptly. Stirring the pasta into the skillet distributes lentils and walnut pieces more evenly than pouring sauce over a tightly packed mound.

For later meals, refrigerate portions promptly in shallow containers and use within three days. Keeping sauce and spaghetti separately gives you more control when reheating. Add a little water to the sauce if it has become too thick, and warm both components thoroughly before combining.
