Miso tofu noodle soup
A ginger-miso broth with tofu, noodles, mushrooms, and spinach.

White miso seasons a quick ginger broth with mushrooms, spinach and generous pieces of tofu. The noodles cook in the same saucepan, so their package timing determines the last part of the simmer. Mixing the miso in a small bowl first keeps the broth smooth without breaking up the tofu.
Give each ingredient its own timing
Slice the mushrooms reasonably evenly and the ginger thinly. They enter the water first, giving the mushrooms time to soften before the noodles begin cooking. Thick ginger chunks remain quite noticeable in a light broth; thin slices are easier to spot and leave aside if you prefer.
Drain the firm tofu and cut it into pieces that fit comfortably on a soup spoon. This preparation does not require pressing it dry for frying. Lower the cubes into the broth gently and use a spoon to separate the noodles without repeatedly stirring through the tofu.
Read the noodle package before starting. A fine wheat noodle may be ready much sooner than a thick one, and the cooked texture matters more than matching a generic time. Keep the liquid at a steady simmer and check a strand near the shortest stated time. Spinach needs only its short final cook.
Choose the miso and noodles carefully
Buy plain plant-based white miso for this soup. Miso soup sachets and ready-seasoned pastes may include fish stock, so check the ingredients rather than relying on the word miso on the front. Wheat noodles also vary: some contain egg, while others are made without it.
Miso is already salty, which is why the card does not add separate salt. The FDA recommends comparing sodium labels using matching serving sizes. That is useful when choosing between pastes, especially when one label gives a teaspoon serving and another uses a tablespoon.
After turning off the heat, whisk the paste with a ladleful of broth until no lumps remain. Stir that mixture back into the pot, then add the sesame oil and lime. This order makes it easier to distribute the concentrated paste through both portions.
Keep noodles from taking over the leftovers
The noodles keep a firmer texture when the soup is served soon after cooking. Noodles continue to soften in stored broth, so for planned leftovers you can cook and pack them separately using their package method. Keep the tofu, mushrooms and broth together in another container.
Refrigerate promptly and use within three days. When reheating, add water if the noodles have absorbed much of the broth and heat the serving thoroughly. Add only the amount of extra liquid the texture needs; a large addition will dilute the miso seasoning.
