Peanut tofu and broccoli noodles
Noodles, browned tofu, and broccoli tossed in a lime-peanut sauce.

Peanut sauce coats spaghetti, golden tofu and broccoli in two large noodle bowls. The broccoli shares the pasta saucepan, while the tofu browns in a skillet. Mixing the sauce before either component is ready lets you bring everything together quickly without trying to dissolve peanut butter among tangled noodles.
Use the two pans at the same time
Drain the tofu and pat its surface dry before cubing it. Give the pieces enough space in the skillet to touch the hot pan, and turn them gently once a side has had time to color. Constant stirring makes it harder to keep those browned surfaces intact.
Read the spaghetti package before you start the tofu. The pasta may cook faster or slower than the estimate you have in mind, especially when changing brands. Broccoli goes into the same water for the final part of that cooking time, so cut the florets into similar sizes. Large pieces can remain firm while small fragments become soft.
Drain the pasta and broccoli well, but have the sauce and skillet ready nearby. A long wait in the colander gives the strands more time to stick together. If using frozen broccoli, follow its package instructions and coordinate that timing with the noodles rather than assuming it needs exactly the same cook as fresh.
Whisk the sauce until the lumps disappear
Stir the peanut butter jar first if its oil has separated. In the bowl, combine the measured peanut butter with the soy sauce, lime, ginger and sauce water. Scrape any dense paste from the bottom and whisk until the sauce can be poured over the noodles evenly.
Keep the final toss over low heat. The purpose is to coat the noodles and warm the sauce through, with enough movement to distribute broccoli and tofu. A very hot pan can thicken the sauce before it reaches all the pasta. Add any extra water gradually if the coating becomes too tight.
Soy sauce contributes salt even though there is no separate salt in the ingredient list. The FDA advises checking sodium amounts against the label’s serving size. Brands and reduced-sodium versions can change the result, so taste after tossing before deciding on any extra seasoning.
Reheat without drying out the noodles
Refrigerate leftovers promptly in shallow containers and use within three days. The peanut coating can become thicker when chilled. Stir in a little water as the serving reheats, then heat thoroughly throughout before eating.
Rice noodles and gluten-free tamari are the suggested wheat-free alternatives. Check both packages, including their cooking directions; rice noodles may need soaking or a different boiling time. Peanut and soy are still present in that version.
