Roasted cauliflower chickpeas
Roasted cauliflower, potatoes, and chickpeas with a lemon-tahini drizzle.

This tray combines soft potato centers, browned cauliflower edges and chickpeas that become a little firmer in the oven. Lemon-tahini sauce adds moisture at the table. Starting the potatoes first gives them extra cooking time without keeping the cauliflower in the oven longer than it needs.
Cut for the staggered roasting time
Keep the potato cubes close to the size given in the card. Larger pieces can stay firm inside while the other ingredients finish. Toss them with their share of the oil and salt, then spread them out for the head start in the oven.
Cut the cauliflower into reasonably even florets, splitting especially thick stems. The flat cut surfaces are useful contact points against the tray. After the potatoes have started, add the seasoned cauliflower and chickpeas and spread everything back into a single layer.
Use a large pan, or divide the mixture across two pans if it is crowded. Ingredients piled on top of one another leave fewer surfaces touching the tray and more moisture trapped between them. If using two oven shelves, check both trays during turning because they may color at different rates.
Dry the chickpeas before seasoning
The chickpea amount means cooked, drained chickpeas. Tip them into a colander, let excess liquid drain away and pat them dry before mixing with the oil and spices. Wet chickpeas make it harder to distribute the small amount of oil evenly over their surfaces.
Expect a firmer outer texture rather than the uniformly dry crunch of a packaged chickpea snack. They share the oven with vegetables that release moisture. Judge the tray by the whole meal: tender potato centers, soft cauliflower stems and some browned edges.
Turn the mixture carefully during the final roast, loosening pieces that have begun to stick. A thin spatula is useful for lifting potato surfaces without tearing them away from the centers. Cumin and smoked paprika should coat the food, so scrape any seasoning left in the mixing bowl onto the tray before it goes back in.
Add the sauce at serving
Stir the tahini jar before measuring, then whisk with lemon and water until smooth. A sauce that briefly thickens when lemon is added can be loosened by gradually whisking in the measured water. Divide the tray between two bowls before drizzling, so each gets sauce across more than the top few pieces.
For leftovers, refrigerate promptly and store the sauce separately within the card’s three-day window. Reheating in an oven can help the vegetable surfaces dry again, though the chickpeas will soften during storage. Heat the meal thoroughly before adding sauce. Broccoli is the suggested cauliflower alternative and should enter later; watch its smaller pieces as they brown.
