Sesame chickpea rice jars
Rice, chickpeas, cabbage, and carrots packed with a sesame-ginger dressing.

These rice lunches combine chickpeas, cabbage and carrot with a ginger, lime and sesame dressing. Keep the dressing separate until eating so the vegetables retain their crunch. A wide lunch container is often easier to stir than a narrow jar, even if the components are packed in layers.
Cool the rice before filling jars
Cook the long-grain white rice with its measured water, then leave it covered for the short rest. Fluff it and spread it in a shallow container for prompt refrigeration. A tall jar packed with hot rice is not a useful cooling container because the center remains surrounded by more warm food.
The estimated cooling time in the card is only a guide. Check that the rice is cold before packing it tightly with the other ingredients, and avoid leaving it on the counter while waiting for it to reach room temperature. A shallow layer provides a more practical start than a deep mound in the saucepan.
Health Canada recommends prompt refrigeration in shallow containers and using refrigerated leftovers within two to three days. Keep that storage period tied to the day the rice was cooked, rather than restarting the clock when the jars are assembled.
Prepare components that mix easily
Drain the cooked chickpeas thoroughly before weighing them. Water carried into the container will collect around the rice and dilute the dressing when it is added. The recipe needs cooked chickpeas; dry ones require a separate cooking method and are not a direct swap by weight.
Shred the cabbage finely and grate the carrot so they can mix through the rice. Remove the hard cabbage core first. Long, thick strips look attractive in a jar but can be awkward to lift and chew in a mixed lunch.
Whisk the soy sauce, toasted sesame oil, lime and grated ginger together. The sesame oil is concentrated in flavor, so distribute it through both portions rather than pouring it onto just the top layer. Shake or stir the dressing again before serving if it has separated.
Pack for the trip as well as the refrigerator
Keep the assembled rice, beans and vegetables chilled, with dressing in a small sealed container. Use an insulated lunch bag with cold packs when a refrigerator is not available during transport. Toss in a roomy bowl or lunch box immediately before eating.
Cooked brown rice is an alternative only when prepared with its own water amount and timing. Gluten-free tamari can replace soy sauce, but check the package and remember that sesame and soy remain in the meal. The original quantities and estimates apply to the white-rice and soy-sauce version in the card.
