Smashed chickpea sandwich
A chunky chickpea sandwich filling with lemon, mustard, celery, and tahini.

A fork turns cooked chickpeas into a sandwich filling with enough texture to avoid a paste. Tahini binds it, lemon adds acidity, and celery supplies small crunchy pieces. The filling is also useful for using up the last few slices of bread without cooking a separate meal.
Mash before adding the crunch
Drain the chickpeas well before they reach the bowl. Water caught between the beans can make the filling loose, particularly after the lemon juice and measured water are added. Press the chickpeas with the back of a fork until most split, leaving small pieces that give the sandwich some bite. A potato masher is quicker for a larger batch, but a blender can take the mixture past chunky very quickly.
Add the finely diced celery and onion after mashing. Keeping those vegetables small helps the filling spread evenly and makes the sandwich easier to cut. Large onion pieces can dominate an individual bite; a fine dice distributes the same measured amount through the bowl. Stir until the tahini dressing reaches the broken chickpeas at the bottom as well as those on top.
Choose bread that can hold the filling
This recipe makes two large sandwiches. Bread with some structure holds the generous filling more comfortably than very soft, thin slices. Lightly toast it if you prefer a firmer surface, then let steam escape before assembling. Check the bread label for milk, eggs, honey, and sesame; the reference bread used in the calculations contains sesame.
Chickpeas belong to the pulse family and supply both protein and dietary fiber. The bread and tahini also affect the final meal, so replacing either changes the recipe’s calculated totals. White beans make a softer filling and need less mashing. If cucumber replaces celery, drain it particularly well: its extra moisture can overwhelm the dressing and soften the bread.
Assemble when lunch is close
Keep the filling covered and chilled separately from the bread. Lemon and mustard season the mixture, but they do not make a packed sandwich suitable for storage on a warm desk. For travel, use an insulated lunch bag with cold packs; USDA’s lunch guidance explains how to keep perishable fillings cold.
Before assembling a chilled portion, stir it once so any dressing at the bottom returns to the chickpeas. Spread it across the bread with a small border, press the second slice down gently, and cut with a sharp knife. Keeping the filling separate also lets you use the last portion on a different day without sacrificing another pair of slices to sogginess.
