Small potato cubes steam before they brown, which keeps the scramble in a single pan. Crumbled tofu picks up turmeric and nutritional yeast, and spinach goes in last. The finished skillet has soft tofu among potatoes with browned edges, rather than one uniform texture.

Steam the potato centers first

Cut the potatoes into even 1 cm cubes. The short covered stage gives those small pieces time to become nearly tender before the pan is asked to brown them. Check a larger cube with a knife at the end of that stage. If its center is still hard, continue briefly with enough water to prevent the bottom drying out.

Remove the lid and let remaining water evaporate before adding onion and the rest of the oil. Potatoes sitting in a puddle will keep steaming instead of developing the browned surfaces the recipe needs. Once the pan is drier, turn the cubes gently and leave them in contact with the skillet between turns. Crowding or constant stirring makes that contact less consistent.

Use tofu crumbles that suit a forkful

Drain the firm tofu and break it into bite-size pieces. Very small crumbs coat the potatoes almost like a sauce, while larger pieces remain softer inside. Either can work, but a mixture of modest crumbles spreads the seasoning through the skillet. Sprinkle the turmeric, paprika, salt, pepper, and nutritional yeast over the tofu so the spices do not collect in one bright yellow patch.

Nutritional yeast gives a savory flavor, but its vitamin B12 content depends on fortification. NIH notes that some nutritional yeasts have B12 added; check the package rather than assuming the ingredient always supplies it. The recipe’s stated estimate refers to its listed ingredient data, and a different product can change that estimate.

Keep greens and leftovers in good shape

Chopped spinach needs only the final short cook to wilt into the warm scramble. Fold it through so leaves on top reach the pan’s heat. If using kale instead, chop it finely and allow enough extra cooking for its firmer stems and leaves. Sweet potato is another listed swap; keep the cubes small and check tenderness before adding tofu.

Divide the skillet into two portions while the ingredients are still distributed evenly. For meal preparation, refrigerate promptly in shallow containers and follow the recipe’s three-day limit. A little water can help a chilled portion warm through before the potatoes begin sticking again. Stir carefully as it reheats so the cubes keep some shape. Additional toast or sauce is separate from the recipe’s stated yield and calculations.
