Tomato lentil side
Brown lentils simmered with tomato paste, garlic, and oregano.

A pot of seasoned lentils can fill the gap between a vegetable side and a larger bowl. Tomato paste adds flavor without a large can of sauce, and the lentils stay distinct enough to spoon into wraps later. The paste joins after the lentils have softened.
Cook for tenderness, then reduce
Brown lentils are the starting point for this texture. Rinse them before adding them to the saucepan with the softened onion, garlic, oregano, water, and salt. Keep the simmer uncovered as directed, and stir occasionally so the lentils at the bottom cook as evenly as those above. The liquid should remain available until the centers are tender.
Press a lentil with a spoon or taste one after cooling it briefly. A firm, chalky center means it needs more cooking. If the pan has become dry by then, add a little water and continue. Once the lentils are soft, excess liquid can be reduced; trying to make the pot look dry before they are cooked leaves you working against the recipe’s sequence.
Use tomato paste as a finishing ingredient
Tomato paste is concentrated, so a small measured amount seasons the whole pan. Stir it through thoroughly after the lentils soften, breaking up any dark red pockets with the spoon. The short final simmer blends it into the remaining cooking liquid. The aim is lentils with enough sauce to coat them, without a pool of thin liquid underneath.
A small tube of paste is convenient if you often need only a spoonful. If using a can, plan another recipe for the remainder and follow its storage label after opening. There is no need to buy a separate jar of pasta sauce for this dish. Dried thyme can replace oregano for a different herbal flavor, and green lentils can replace brown if you allow their own time to soften.
Treat the side portion as a starting point
Lentils are one of the pulses that provide protein and fiber. This recipe divides the pot into four side portions; a larger serving changes the nutrition and cost per portion. A spoonful can sit alongside vegetables, or a chilled portion can later go into a wrap, with any extra ingredients counted separately.
Lemon goes in off the heat once the texture is right. It sharpens the tomato flavor without asking the lentils to cook in extra liquid. Refrigerate leftovers promptly in shallow containers. Reheat with a small splash of water, then let any surplus evaporate until the lentils are spoonable again. Stir gently so they keep enough shape for a side dish instead of becoming a mash.
