Frozen peas add color and a little sweetness to a saucepan of rice. Turmeric seasons the grains lightly and gives them a yellow color without a premixed rice packet. The peas go in late so they warm through without cooking for the full rice simmer.

Match the rice to the method

Use dry long-grain white rice for the stated water and timing. Brown rice needs a longer cooking schedule, and quick-cooking products may need less water or less time. Check the packet before substituting. Keeping to the specified type makes the sequence of covered cooking, adding peas, and resting much easier to judge.

Finely dice the onion so it softens during its short start in oil. Stir the turmeric and rice through it briefly before adding water. That distributes the spice around the grains instead of leaving yellow clumps on the surface. Turmeric stains utensils and cloths readily, so put the measuring spoon somewhere washable rather than on a pale towel.

Keep steam in the saucepan

Once the water boils, cover the pan and reduce the heat to low. A lid that fits well helps keep the measured water available as steam. Repeatedly lifting it releases that heat and moisture. A vigorous boil can also use up the water before the grains have softened, so listen for a gentle simmer rather than loud, continuous bubbling.

Scatter the frozen peas over the rice at their stated stage, then replace the lid. They need to become hot throughout without spending the whole rice cooking time in the saucepan. Frozen corn can be used instead for a different flavor and texture. Check a grain of rice near the end; if it is still firm and the pan is dry, a spoonful of water and a little more covered cooking may help.

Rest, fluff, and portion promptly

The final covered rest is part of the method. Let the pan stand off the heat before fluffing gently with a fork. Stirring hard while the rice is hot can break softened grains and mash the peas. Lift from the bottom to distribute the vegetables and onion without compressing the whole pan.

Divide into four side portions rather than treating the pan as a main-meal yield. Any beans, tofu, or sauce served alongside are separate additions. For leftovers, move rice into shallow containers and refrigerate promptly; FoodSafety.gov’s cooling advice applies to cooked foods even when they contain no meat. Reheat only the portion needed, stirring so the center becomes hot as well as the edges. A little water can restore moisture, but reheating cannot make poorly stored rice safe.
