Cabbage lentil skillet served ready to eat

Brown lentils and thinly sliced cabbage share a pan in this gently spiced dinner. The lentils start first, then the cabbage steams under the lid as the lentils finish cooking. Carrots add small sweet bites, and lemon brightens the pan after any excess liquid has simmered away.

Give the lentils a head start

Use dry brown lentils as listed, checking them for small stones before rinsing. Their texture suits a skillet where you still want to see individual lentils among the vegetables. Red lentils break down more readily and would give this combination a softer, thicker finish, so they need a different approach to timing and water.

The first uncovered simmer lets the lentils begin softening before the cabbage joins them. Keep the heat moderate enough that liquid bubbles steadily without splashing. Pan width and burner strength affect how quickly water disappears. If the bottom looks dry while the lentils still have firm centers, add a small splash of water and continue gently.

Taste a lentil from the middle of the pan before finishing. A tender outer skin can hide a hard center. The final dish can be fairly dry and spoonable or retain a little broth; remove the lid only after the lentils are tender enough to eat.

Cut the cabbage to match the method

Slice the cabbage into thin strips, working around the densest core. A large pile of raw cabbage takes up less space as it softens, so fold it in gradually if the skillet is nearly full. Thick chunks will take longer to soften and make the finished texture less even.

Dicing the carrots small helps them cook alongside the onion during the first stage. Have the garlic and spices ready before adding them, because their brief time in the oil passes quickly. The water should follow before they start to darken. Lemon belongs at the end, when you can taste it against the cooked vegetables and lentils.

Stretch a cabbage across several meals

This recipe uses a sizeable piece of cabbage without requiring the whole head. Keep the unused portion intact and refrigerated, cutting only what you need for another meal. Brown lentils are convenient to portion straight from a dry bag, with no half-can left to find a use for.

Divide the finished skillet among three bowls or shallow storage containers. Refrigerate within two hours and use within three days. The lentils absorb more liquid as they stand, so stir in a little water during reheating if needed. Stir from the bottom and heat until steaming throughout, rather than judging the temperature from the surface alone.
