Peanut butter thickens the tomato liquid around whole chickpeas, making this a rich stew without a separate blended sauce. Ginger keeps the flavor lively, and spinach softens at the end. The recipe makes two generous bowls, with lemon stirred in after cooking to balance the peanut butter.

Smooth peanut butter needs a little liquid

Stir the peanut butter in its jar before measuring, especially if oil has collected on top. A smooth paste is easier to distribute than a scoop containing dry solids and a separate layer of oil. Check the label when shopping: added sugar and salt can change the flavor of the finished stew.

Mixing the peanut butter with a ladleful of hot tomato liquid gives you room to work out lumps. Add that loosened mixture back to the pan and stir across the bottom. Once the peanut butter is in, the liquid thickens and can catch more easily, so maintain a gentle simmer for the short final cook.

If you prefer a looser bowl, add water a little at a time after the peanut butter is evenly mixed. A thicker stew coats the chickpeas and leaves less liquid in the bottom of the bowl. Either way, heat the whole mixture through before adding the greens.

Chickpeas and spinach do different jobs

Use chickpeas that are already fully cooked. They should be tender enough to crush with a spoon while retaining their skins. Canned beans save preparation time, and a batch cooked ahead works too; preparing dry chickpeas is a separate task outside this recipe’s cooking time.

Chop the spinach so long stems do not trail between spoonfuls. Stir it in near the end, just until softened and hot. Keeping it out of the longer tomato simmer gives the greens a more distinct presence in the finished bowl.

Beans, nuts and vegetables contain nonheme iron, and vitamin C can improve its absorption, as explained by the NIH Office of Dietary Supplements. That is a useful general reason to pair pulses with vegetables and citrus, alongside the flavor lemon brings here. It does not establish a measured iron benefit for this particular bowl.

Reheat gently and stir thoroughly

Cool leftovers in shallow containers, refrigerate within two hours, and use within three days. Peanut butter and chickpeas can leave a thicker stew after chilling. Stir in a small splash of water while reheating and scrape the bottom gently so it heats evenly.

Keep the heat moderate and stir until the center is steaming hot. If changing to sunflower seed butter, expect a different flavor and check the jar’s ingredient and allergen information. The substitute changes the nutrition as well as the taste.
