Ginger peanut sauce brings together smooth peanut butter, fresh ginger, lime and a small amount of maple syrup. Whisk it cold, then spoon a portion over cooked noodles, vegetables or a prepared bowl. The recipe makes the sauce separately so its amounts and estimates are easy to keep track of.
Read sugar and sodium labels together
Maple syrup sweetens the sauce, and its sugars contribute to the finished portion. The FDA distinguishes total sugars from added sugars: total sugars include both naturally occurring and added sugars, while sugars supplied by syrups count as added sugars. Those two label lines should not be added together. Our nutrition estimate reports total sugar from all the ingredients; it does not separately calculate added sugar.
Peanut butter and soy sauce also deserve a label check. This recipe uses a smooth, unsweetened peanut-butter reference, but jars can differ in sugar and salt. Ordinary soy sauce contributes sodium despite there being no separate spoonful of salt in the ingredients. The FDA recommends comparing sodium with the label’s serving size in mind. Compare matching amounts when choosing between products. Substituting another brand can change the estimate.
Make the portion definition useful
One serving is one sixth of the finished batch. It is a sauce portion: noodles, tofu or vegetables added to make a meal have their own costs and nutrition. Divide the sauce evenly rather than assuming that every jar of peanut butter produces the same finished cup measure. Using two portions means using twice the listed per-serving estimate.
Stir separated peanut oil back into the jar before taking the six tablespoons. Otherwise, the top and bottom of the jar can give you different mixtures. Grate the ginger finely and mince the garlic so their flavour is distributed through the sauce instead of concentrated in large pieces.
Start whisking the peanut butter with the liquid ingredients and half the water. Add the remaining water gradually, scraping dense paste from the bottom. Use the full measured amount, then stir in the aromatics. No blender or stovetop is needed. For a larger batch, choose a roomy bowl or mix separate batches before dividing them into portions.
Keep the prepared sauce cold
The sauce contains peanuts from the peanut butter, plus soy and wheat from the ordinary soy sauce. Check every package when serving someone with a food allergy; switching to tamari does not remove peanuts or soy.
Refrigerate the prepared batch promptly in clean covered containers. Health Canada advises using refrigerated leftovers within two to three days, and the card uses a three-day limit. The FDA recommends a refrigerator temperature of 40°F or below. Stir the chilled sauce before taking a portion with a clean spoon, then return the main container to the refrigerator.

Storage & reheating
Refrigerate promptly in clean covered containers at 4°C / 40°F or below and use within 3 days. Serve cold and stir before portioning. Discard sauce left out for more than 2 hours, or 1 hour above 32°C / 90°F. Use a clean spoon and keep the main batch chilled.
Substitutions
- Fresh lime juice can replace bottled juice at the same measured volume; cost and flavour can differ.
- Tamari labelled gluten-free can replace soy sauce at the same volume; check all package labels and allergen information. Peanuts and soy remain, and the estimates can change.
Cooking notes
- This is a sauce portion, not a complete meal. Noodles, tofu, vegetables and other serving bases are excluded from the estimates.
- For a larger batch, use a bowl with room to whisk or mix in separate batches. Scrape and stir each batch thoroughly before dividing it into portions.
- Nutrition uses the existing salted, smooth unsweetened peanut-butter reference and ordinary soy sauce. Brands vary; no added-sugar amount is separately estimated.
Contains: peanuts, soy, wheat. Check the labels of your ingredients.
