Ginger tofu cabbage rice
A covered-pan rice dinner with tofu, cabbage, ginger, and soy sauce.

Browning tofu first gives this covered-pan rice dinner flavor before the cabbage and grains cook together. Ginger and soy sauce season the liquid, while finely cut vegetables settle among the rice. After the lid goes on, a gentle heat and an undisturbed rest do most of the remaining work.
Brown the tofu before adding water
Drain and pat the tofu dry so the first stage can develop some golden patches. Lay the cubes across the hot pan and turn them occasionally, giving their faces time against the surface. A deep skillet needs enough room for the later cabbage and rice as well as the tofu.
The tofu will soften slightly during the covered rice cook. Its browned surfaces still contribute flavor, but the final texture is tender. Keep the cubes large enough to turn without crumbling them into the rice. A broad spoon or spatula is useful once the vegetables join the pan.
Have the cabbage, carrot, garlic and ginger prepared before you begin. Garlic and ginger enter after the vegetables have started to soften, then the rice and liquid follow. That order lets you move quickly through the brief aromatic stage without leaving the seasonings over the heat while you chop.
Thin cabbage and long-grain rice share the simmer
Slice the cabbage into fine shreds and cut the carrot into thin matchsticks. Thick vegetable pieces need more time than the rice and can leave an uneven finished pan. Fold the cabbage down as it softens so the rice can settle into the liquid.
Use the dry long-grain white rice specified here. Brown rice needs a different balance of time and liquid, so it is not a direct swap during this short covered simmer. After the first stir, cover the skillet and keep the heat low. Repeatedly lifting the lid releases steam that the rice needs.
Check for tender grains at the end of cooking, then leave the pan covered off the heat for the full rest. Fluff gently from underneath to avoid breaking the tofu. Stir in the lime only after the rice has settled, so its juice spreads through the finished meal.
Cool the rice in portions
This is a two-portion dinner, which makes dividing leftovers straightforward. Transfer them into shallow containers and refrigerate within two hours. The USDA advises dividing hot food into small, shallow containers for refrigeration; you do not need to leave a full skillet out until it is cold.
Use the refrigerated rice within three days. Reheat with a small splash of water if needed, stirring until the center is steaming hot. Frozen peas can replace carrot as listed, joining the pan with the rice. Tamari is another sauce option; choose a gluten-free labelled bottle if avoiding wheat.
