Kidney bean tofu tomato skillet
Tofu and kidney beans simmered in a peppery tomato sauce.

Tofu and kidney beans simmer together in a thick tomato sauce with pepper, onion and smoked paprika. The tofu goes straight into the sauce, keeping preparation short. Most beans stay whole, with a few mashed at the end if you want the liquid to cling more closely to each spoonful.
Start with fully cooked kidney beans
Canned kidney beans suit this short simmer because they have already been cooked. Drain and rinse them before weighing the recipe amount. Beans cooked from dry also work, provided they are fully cooked before the skillet begins. Their dry weight is not interchangeable with the cooked weight in the ingredient list.
Health Canada explains that the canning process sufficiently destroys the lectins in red kidney beans. Dry kidney beans need their own safe preparation; they should not be added directly to this tomato sauce. This distinction matters more than whether the beans come from a can or a batch you cooked earlier.
Look for beans that keep their shape when lifted with a spoon but have soft centers. Fold them into the sauce gently so their skins remain mostly intact. White beans are the listed alternative and will give a softer, milder result.
Let the vegetables soften before the sauce thickens
Cut the pepper and onion into small pieces so they soften during the first stage. Stir them around the pan rather than letting one patch sit against a hot spot. The garlic and dried seasonings enter briefly before the tomatoes and water, so have those wet ingredients ready to add.
Firm tofu gives you cubes that survive the simmer. Pat away excess package water and use pieces large enough to lift without crumbling. This method gives tender tofu throughout, with tomato sauce around the surfaces. It does not include a separate frying stage.
Keep the uncovered simmer gentle enough that the sauce thickens without splattering heavily. Run the spoon across the bottom occasionally and fold the cubes back through the liquid. If the pan becomes dry before the tofu is hot, a small splash of water will loosen the sauce.
Thicken the portion you plan to eat
Press a few kidney beans against the side of the pan near the end, then stir them back in. Add more mashed beans only if the sauce still looks loose. Leaving most whole keeps the bowl from becoming a purée.
Divide the finished skillet into two portions. Refrigerate leftovers in shallow containers within two hours and use within three days. Reheat gently, stirring until steaming throughout. Frozen diced peppers can replace fresh ones as listed; cook off the extra moisture during the vegetable stage before building the sauce.
