Pantry red bean rice
Kidney beans and long-grain rice simmered with tomatoes and smoky spices.

Cooked kidney beans, canned tomatoes and white rice make this a useful cupboard meal with a short vegetable preparation. The rice absorbs the tomato juices as it simmers, so the whole pot takes on the paprika and cumin. A covered rest at the end helps you serve separate grains without breaking up the beans.
Begin with the right bean and rice states
The bean weight in this recipe means cooked, drained beans. Canned kidney beans are convenient, or you can use beans already cooked by a separate method. Dry beans cannot go straight into this pot: the short rice simmer is only intended to heat cooked beans through.
Drain and rinse canned beans before weighing them. That keeps excess canning liquid out of a recipe whose water is measured for the rice. Canada’s food guide recommends low-sodium canned beans or rinsing and draining them. The exact sodium change depends on the product and handling, so this recipe does not attach a fixed percentage to the rinse.
Use ordinary long-grain white rice for the listed method. Instant rice and brown rice have different liquid needs and timings. A switch between them requires a separate cooking plan rather than simply waiting longer with the same pot of ingredients.
Control the simmer instead of stirring constantly
Dice the onion and pepper into pieces small enough to distribute through the rice. Soften them before adding the garlic and spices, keeping the spices moving during their brief time in the oil. Add all the tomato juices along with the tomatoes; draining them would remove part of the intended cooking liquid.
Once the mixture boils, reduce the heat and fit the lid. The pot should simmer gently. A hard boil can use up the liquid before the rice is tender and increase sticking at the bottom. Near the end, check a few grains and add a little water only if the pan is dry while their centers are still firm.
After the covered rest, lift and fold the rice gently. Repeated vigorous stirring is more likely to split the beans and turn the tomatoes into a heavy coating around broken grains.
Portion the pot for later meals
Divide the finished batch into four servings. For leftovers, move the rice into shallow containers and refrigerate promptly, within the two-hour limit in the card. Keep it covered once chilled and use within three days.
A small splash of water helps when reheating a portion that has become firm in the refrigerator. Heat it thoroughly and stir carefully so the beans stay intact. A frozen onion and pepper mix can shorten preparation; cook off its loose moisture during the first step.
