Quinoa corn bean salad
A lime-dressed quinoa salad with black beans, corn, and bell pepper.

Black beans, quinoa and corn make a salad that can be portioned ahead and eaten cold. Raw pepper and a little onion add crunch after the cooked ingredients have released their steam. Lime and cumin season the whole bowl without needing a separate bottled dressing.
Cook and cool the quinoa evenly
Rinse the quinoa in a fine sieve so small grains do not disappear down the sink. Drain it before adding the measured cooking water. Use a saucepan with a fitting lid and lower the heat once the water boils; the quinoa needs a gentle covered simmer.
The corn goes on top for the final part of cooking, which keeps the preparation in one pan. Check the frozen corn’s package directions first. If its required cooking method or time does not fit this step, cook it separately as directed and fold it into the finished quinoa.
After the covered rest, fluff gently rather than beating the grains with a spoon. Spread the mixture loosely so the strongest steam can escape before adding the raw vegetables. That short rest is part of preparation, not a reason to leave a finished batch out for an extended time.
Keep the dressing from collecting underneath
Drain the black beans well after rinsing and weigh the cooked, drained amount. Liquid left in the colander can dilute the lime dressing. Canned beans are convenient for a small batch; home-cooked beans also work if they are already tender and properly stored.
Cut the bell pepper into a fine dice so it spreads through the quinoa. Chop the onion smaller still, since large pieces can dominate an otherwise mild forkful. Stir in the lime, oil and cumin before folding in the beans and raw vegetables, then taste once everything is combined.
A lemon substitution changes the citrus flavor without requiring a new sauce. Kidney beans can replace the black beans for a different texture, but their cooked weight should still match the amount in the card. Avoid replacing drained beans with the same weight of dry beans, which is a different quantity of food.
Make three lunches that are easy to mix
Use shallow containers and refrigerate the finished salad promptly. USDA limits room-temperature time for perishable food to two hours, or one hour above 90°F / 32°C. Pack the salad cold and keep it chilled during transport.
Follow the recipe’s three-day refrigerated storage window. Stir a portion before eating so lime and oil that have settled at the bottom return to the grains. If adding bread, avocado or another extra at lunch, count it separately from the recipe’s listed ingredients and estimates.
