Red lentils break down as they simmer, thickening this tomato and coconut curry without blending. The onion, garlic and ginger start in the pan before the liquid goes in, while spinach waits until the lentils are tender. The listed batch makes two large bowls, with rice or bread added separately if wanted.

Use the lentils that suit this texture

Dry red lentils are the ingredient to use for a soft, spoonable curry. Brown and green lentils hold their shape more readily and would change both the timing and the finished consistency. Rinse the red lentils and check the package for any preparation instructions before cooking.

Keep the curry at a gentle simmer once all the liquid is added. Stir along the bottom of the saucepan, especially as the lentils soften and the mixture thickens. A sauce that looks loose early on can become much thicker near the end, so avoid turning up the heat simply to reduce it quickly.

Taste several lentils before finishing. They should be soft through the center, with no firm or chalky pieces left. If the sauce becomes thick while they are still firm, add a little water and continue simmering. The timer is a guide; tenderness decides when the spinach can go in.

Choose coconut milk and curry powder deliberately

Use canned coconut milk rather than a thin coconut drink sold for pouring on cereal. They are different products, and swapping them changes the richness of the sauce. Stir the can before weighing out the required amount so the thicker and thinner parts are combined.

Curry powders vary in heat and seasoning. The mild version suggested in the card is the simplest adjustment if cooking for someone who prefers less heat. Read the ingredients and allergen information on the blend you buy, since spice mixtures can differ even when their names are similar.

Keep the garlic, ginger and powder moving during their brief cook in the oil. If they begin catching, lower the heat and move on to adding the wet ingredients. Dark, stuck spices can carry an unwanted burnt flavor through the whole pot.

Finish and reheat with enough moisture

Fold in the spinach only after the lentils are tender. It needs a short final cook, while the lentils need a much longer simmer. Frozen chopped spinach is an alternative, but follow its package directions and make sure it is heated through.

Divide leftovers into shallow containers and refrigerate promptly, following the three-day limit in the card. The curry will become thicker as it stands. Reheat a serving with a small splash of water, stirring frequently until hot throughout. Add more water gradually so the reheated curry stays spoonable rather than turning into a thin soup.
