Oats make a creamy base for browned mushrooms, white beans and thyme. Lemon and parsley finish this savory breakfast bowl, while nutritional yeast adds flavor to the cooking liquid. The batch makes two hearty portions and uses one pan from browning to serving.
Rolled oats are a whole grain
Plain rolled oats work beyond sweet porridge. They keep the grain’s bran, germ and endosperm, which is why Health Canada includes rolled oats among whole-grain foods. Rolling changes their shape and shortens cooking time without making them a refined flour. Here they soften in water with the browned vegetables, giving the beans a creamy base.
Choose unsweetened old-fashioned rolled oats. A flavored instant packet brings different seasonings, while steel-cut oats need a longer method. If your package’s cup weight differs from the reference shown, use the listed gram weight when you want to follow the recipe’s estimates closely.
What the fibre estimate tells you
Oats contain beta-glucan, a soluble fibre. Health Canada’s assessment of oat fibre distinguishes that component from total dietary fibre. The total fibre in a meal can come from several foods and cannot tell you its beta-glucan content. White beans and mushrooms contribute to this bowl’s estimate alongside the oats.
The beans also contribute protein. Weigh them after cooking and draining: dry beans absorb water, so a dry-bean weight cannot replace a cooked weight in the calculation. When using canned beans, drain before measuring the two cups. Package net weight includes liquid that is not part of the bean portion. The nutrition panel and selected regional price estimate use those stated food forms.
Brown first, then make the oats creamy
Let the mushrooms release their moisture before adding the oats and cooking water. Browning is harder once the pan holds porridge. Use a wide pan, stir the vegetables, and give the remaining water time to evaporate. The garlic goes in later so it does not spend the whole mushroom-cooking time against the hot pan.
Keep the reserved water nearby as the oats simmer. Stir to prevent sticking, then fold in the cooked beans gently. Add enough reserved water to make the mixture spoonable; it will continue to thicken off the heat. Lemon and parsley go in at the end.
For later breakfasts, divide into shallow containers and refrigerate promptly. USDA explains safe cooling and storage, and FoodSafety.gov recommends thorough reheating. Follow the card’s three-day window and temperature check, adding a little water while reheating to loosen the oats.

Storage & reheating
Refrigerate promptly in shallow containers within 2 hours (1 hour above 32°C / 90°F), at 4°C / 40°F or below; use within 3 days. Reheat covered with a splash of water, stirring midway, to 74°C / 165°F throughout. Add water gradually because oats thicken as they stand.
Substitutions
- Use cannellini or navy beans at the same cooked, drained weight; softness, cost and nutrition may differ.
- Steel-cut oats require different liquid and cooking times; use plain rolled oats for this method.
Cooking notes
- Makes two hearty breakfast bowls; the defined portion is half the batch.
- For larger yields, brown mushrooms in batches and use a wider, deeper pan. Extra batches add time; follow texture and temperature rather than multiplying the original cooking time.
- Nutrition uses dry oat weight and already cooked, drained beans. Nutritional yeast is included for flavor; vitamin fortification varies by brand.
