Chunky cucumber, green edamame and grated carrot coated in creamy sesame dressing in a lunch bowl

Chunky cucumber and green edamame make a cool lunch bowl with grated carrot and a creamy sesame dressing. Tahini supplies the sesame flavor, while lime and ginger keep the dressing sharp. The recipe makes two substantial portions, with all the beans and dressing included in each serving’s estimates.

Cook the beans before making the salad

Choose plain shelled edamame and measure it while frozen. The weight in the card refers to beans without pods, before cooking. Follow your bag’s cooking method, water quantity, time and any temperature target. Frozen products differ: H-E-B’s frozen shelled edamame requires cooking to 165°F. Merely thawing that product does not meet its instructions.

Drain the cooked beans and rinse them under cold running water to cool them for tossing. Let the colander drain well, then blot away water clinging to the beans. Surface water would thin the dressing before it reaches the vegetables. If preparing components ahead, refrigerate the beans promptly rather than leaving them on the counter while you finish other tasks.

Keep the cucumber chunky

Leave the cucumber peel on and cut it into quarter-moons about half an inch thick. These pieces give the bowl a crisp bite beside the soft beans. Grate the carrot so it mixes through the salad rather than competing with the cucumber in large chunks. Dry washed vegetables before combining them.

Stir the tahini in its jar before measuring so its oil and solids are evenly mixed. Whisk it with the lime, soy sauce and finely grated ginger, then add the measured water gradually. The dressing should move easily off the whisk. Toss from the bottom of a roomy bowl to distribute the carrot and coat the beans.

A lunch built around soybeans

Canada’s food guide includes soybeans among plant protein foods and recommends choosing plant sources regularly. Here, edamame supplies most of the protein, with tahini contributing more. The required ingredients provide an estimated 29 g protein and 13 g fiber per bowl. These are calculations from ingredient references; brands and measuring differences affect the result. The soy sauce supplies most of the estimated sodium, so extra sauce also changes that figure.

Pack the dressing separately

Cucumber releases moisture as it sits, and dressed pieces gradually soften. For a crisper packed lunch, store the vegetables, cooked beans and dressing separately and toss at mealtime. Give yourself room in the container to stir.

Refrigerate promptly in shallow containers and keep at 4°C/40°F or below. The USDA advises refrigeration within two hours, or one hour above 90°F. Cover the containers once chilled and use the components within three days, following Health Canada’s two-to-three-day leftover guidance. Keep the packed salad cold until eating.

Storage & reheating

Refrigerate promptly in shallow containers at 4°C/40°F or below, within 2 hours of cooking (1 hour above 32°C/90°F). Cover once chilled; use within 3 days. Keep dressing separate and keep lunch cold. Cucumber softens and releases water during storage.

Substitutions

  • Use lemon juice in place of lime for a different citrus flavor.
  • Use gluten-free tamari in place of soy sauce if avoiding wheat; check the label. Soy and sesame remain.

Cooking notes

  • The 45 ml water is for dressing. Use additional cooking water as directed on the edamame package and discard it after cooking.
  • Timing allows for heating cooking water; package directions and extra batches can extend it. Substitutions change the estimates.

Contains: sesame, soy, wheat. Check the labels of your ingredients.
