Sesame tempeh and green beans served ready to eat

Tempeh and green beans take well to a quick soy-ginger glaze. The beans steam in a small amount of water before the lid comes off and the sauce reduces. This keeps the method to one pan and leaves the vegetables with some bite.

Give the tempeh a dry start

Slice the tempeh into strips of similar thickness, about 5 mm, and lower them into the warmed olive oil. Let each side spend time against the pan before turning. Constant stirring breaks the strips and gives their surfaces less contact with the skillet. A thin spatula is useful for lifting several pieces without squeezing them.

The first stage is for light browning. Once the beans and water go in, the covered skillet becomes a moist cooking environment, so any remaining pale surfaces will stay fairly pale. A wide pan gives the tempeh room at the start and allows the water to evaporate quickly when the lid comes off. If the pan still looks watery after steaming, let that liquid reduce before adding the glaze ingredients.

Keep the glaze concentrated

Garlic, grated ginger, soy sauce, sesame oil, and maple syrup only need a short finish together. Have them measured before uncovering the beans so the vegetables do not sit cooking while you find the bottles. The syrup helps the reduced sauce cling; adding more will also make the finished dish sweeter. Scrape the bottom gently while tossing so the coating reaches the tempeh as well as the beans.

Plain tempeh is the most predictable choice because a prepared marinade brings its own seasoning. Compare the sodium on soy sauce labels if you use a different brand. Frozen green beans are a useful alternative when fresh beans are expensive or need extensive trimming; follow their package cooking instructions and watch how much water they release. Add lime after the heat is off to keep its sharp flavor distinct from the sweet glaze.

Pack the beans with their sauce

Divide the cooked dish between shallow containers and refrigerate promptly, following FoodSafety.gov’s cooling guidance. Keep the glaze with each portion rather than leaving it in the pan. During reheating, a small splash of water can loosen it before the edges catch; stop adding water once the sauce coats the food again.

The beans will soften further on reheating, so use their tender-crisp texture as the stopping point on the first day. Rice can accompany the dish, but it is a separate addition to the recipe’s yield, nutrition, and cost.
