Tofu spinach lentil dal served ready to eat

Red lentils make a soft base for cubes of firm tofu. Ginger and cumin keep the seasoning straightforward, and spinach cooks in the same pot near the end. This dal is thick enough to eat from a bowl; bread or rice can be served alongside as a separate addition.

Soften the lentils before adding tofu

Rinse the lentils and begin with the measured water. As they simmer, the small lentil pieces soften and make the liquid thicker. Stir often enough to reach the bottom, especially as the mixture loses its watery appearance. If the pot dries before the lentils are nearly soft, add a little water and continue cooking. A grainy center needs more time.

Red lentils are useful here because they break down into a soft base. Brown or green lentils hold their shape differently and need another cooking schedule, so they are not a direct swap for the stated method. Check the lentils themselves before moving on. Their age, the pan, and the strength of the simmer can all shift the time needed.

Fold the cubes through gently

Drain the tofu and cut it into pieces small enough to share a spoonful with the dal. Add it when the lentils are almost soft, then fold instead of beating the mixture. Firm cubes contrast with the lentil base; repeated vigorous stirring can break them down until the whole pot has a similar consistency.

Keep the spinach for the final stage. Finely chopped leaves distribute more evenly than long strands, which can trail from the spoon. Frozen spinach can replace fresh, but let it heat through fully and account for any water it releases. Stir in lemon after removing the pot from the heat. Lime is a listed alternative with a different citrus flavor.

Use the thick base for planned meals

Lentils supply iron, as listed in NIH’s food sources of iron. Tofu and lentils also give this recipe two distinct textures, so choosing a firm tofu matters for more than the ingredient name. Compare labels if you change brands, especially where calcium or sodium differs. The nutrition estimate cannot describe every tofu product at the same weight.

The dal thickens as it stands, which makes packed portions easy to contain. Cool them promptly in shallow containers and refrigerate within the recipe’s limit. Add water gradually while reheating until the base moves easily around the tofu, stirring from the bottom so it warms evenly. Keep any rice or bread in its own container; those additions are outside this recipe’s yield, nutrition, and cost.
