Cut green beans and sliced mushrooms in a creamy sauce with golden breadcrumbs, in an ivory baking dish on a dusty-blue table

This vegan green bean casserole uses canned beans, a mushroom sauce and a whole-wheat crumb topping. Thicken the sauce on the stove, fold in the drained beans and finish the casserole in a wide dish. The original batch makes four side portions, with a temperature check to guide the finish.

Measure the drained beans

Drain the beans before measuring. USDA’s canned-food reference gives 135 g per cup of regular-pack canned green beans, drained solids. Four cups supply the 540 g used here. Packing liquid is outside that weight, and the number of cans needed depends on their drained yield.

The costs below estimate the food used. They rely on a USDA drained-yield reference and a Canadian minimum drained-weight table, with the assumptions explained beside the prices. Neither source measures your particular can. Keep usable extra beans for another meal and refrigerate them promptly; buying whole packages can cost more than the portion used.

Thicken the sauce first

Canned beans are already tender. Minimalist Baker’s canned-bean note skips the blanching used for fresh beans. Here, the mushrooms and onion cook before the beans enter the pan, so they can soften without repeatedly stirring the beans.

Whisk the soy milk into the flour-coated vegetables gradually. Let the sauce thicken before assembly; it should coat a spoon and remain pourable. Choose plain unsweetened soy milk for the savoury sauce; a vanilla variety changes its flavour. The estimates count the flour, bread and all the measured oil, including the portion coating the crumbs.

Check the bread’s ingredient list for milk, eggs or honey. Loaf thickness varies, so weigh the bread before turning it into crumbs. The nutrition reference uses a 42 g slice; a thin sandwich slice may weigh less.

Keep the layer shallow

Use the stated dish capacity as well as its approximate footprint. A deeper dish changes how far heat must travel to the centre. For a doubled batch, divide the mixture between two matching dishes or bake separate batches. The serving controls keep the original cooking times fixed.

Start checking while the crumbs brown. CDC’s casserole temperature guidance calls for 165°F; the card gives the corresponding 74°C target. A browned top does not establish the centre temperature. Loose foil can protect the topping while the filling finishes heating.

Plan the rest of dinner

Each serving is a quarter of this casserole, made with 135 g of drained beans. It is a vegetable side. A tofu and potato tray bake is one option for the main dish, with its own ingredients, cost and nutrition. Our protein portions guide explains how to assess the rest of a plant-based meal.

For saved portions, follow the card’s shallow-container and reheating instructions. The food-storage guide covers planning usable leftovers. Expect the crumbs to lose some crispness in storage rather than treating the reheated topping as freshly baked.

Storage & reheating

Refrigerate promptly in shallow covered containers, within 2 hours (1 hour above 32°C / 90°F), at 4°C / 40°F or below. Use within 3 days. Reheat only the portion needed, covered in the microwave; stir, leave covered for a few minutes, then check several places for 74°C / 165°F throughout. The crumb topping may soften.

Substitutions

  • Another plant-based whole-wheat loaf can supply the crumbs. Weigh the stated bread amount; slice size, sodium and allergens vary. Check for milk, eggs and honey.
  • Fresh and frozen beans need their own preparation. This card's weights, timing and estimates use drained, regular-pack canned beans.
  • You can omit the measured salt; the default estimates include it. The canned beans and bread also supply sodium.

Cooking notes

  • The original four-serving batch uses one 3-quart / 2.8 L dish, about 9 × 13 inches / 23 × 33 cm, assembled while the filling is hot. Allow about 40 minutes for stovetop work and baking; doneness checks control the finish.
  • Serving controls keep the original times and temperatures fixed. Double the batch in two matching dishes or cook batches separately; do not make one deeper casserole. Extra batches take more time.
  • Can counts and drained yields vary. Buy enough cans to obtain the stated drained amount. Cups and slices are approximate; weighed grams control estimates. Soy milk uses the documented approximate mass normalization.
  • All measured oil and bread are counted. For the original batch, small weights are thyme leaves 0.5 g, salt 0.75 g and pepper 0.6 g. US/Canadian bean costs use disclosed drained-mass proxies, not measured yields of the retail cans.

Contains: wheat, soy, sesame. Check the labels of your ingredients.
