Rice and white beans turn a few vegetables into a thick soup. Peanut butter adds body without a roux, and frozen peas go in late enough to keep their color. The rice continues taking up liquid as the pot stands, so leftovers will be thicker than the first serving.

Give the rice enough liquid to soften

Dice the carrots into similar pieces so they soften alongside the long-grain white rice. Cook them with the onion before adding the garlic and ginger briefly. Once the water, rice, and cooked beans are in, keep the pot at a steady simmer and stir occasionally across the bottom. Some beans may break down during this stage, which contributes to the thick texture.

Check a grain of rice before moving on to the peanut butter. It should be tender through the center. If the liquid has reduced faster than expected, add a little water and continue cooking. Brown rice is not a direct timing swap: its longer cooking time changes when the beans, peas, and peanut butter should enter the pan.

Loosen peanut butter in a separate bowl

Choose smooth, unsweetened peanut butter so the soup stays savory. Stir the jar before measuring if the oil has separated. A spoonful taken only from the dry bottom of the jar will behave differently from one drawn mostly from the oily surface.

Whisk the measured peanut butter with a ladleful of hot soup until it loosens, then stir that mixture into the saucepan. Dropping a dense lump straight into the full pot makes it harder to find and dissolve. This small mixing step lets the peanut flavor reach each bowl without requiring aggressive stirring that would mash the beans. Smooth sunflower seed butter is a listed alternative, with a different flavor and allergen profile.

Finish the vegetables, then plan leftovers

Frozen peas only need the final simmer to heat through. Corn can replace them if that is what is already in the freezer. Add the lemon juice after taking the pan off the heat, then stir and divide into four bowls. The lemon gives a sharper finish to the creamy peanut base; extra water added earlier should be incorporated before that last seasoning step.

For another day’s lunch, cool the soup promptly in shallow containers and refrigerate within the recipe’s storage limit. Health Canada’s leftover guidance explains prompt cooling and refrigerated storage. Add water gradually while reheating because the rice will have thickened the soup further. Stir between additions and check that the center heats through. Keeping portions separate avoids repeatedly warming the entire batch just to serve one bowl.
