White beans and the starch from gnocchi make a creamy sauce without cream. Mushrooms brown before the liquid goes in, giving the dish a deeper flavor than simmering everything from the start. Shelf-stable potato gnocchi keeps the preparation short.

Give the mushrooms space at the start

Slice the mushrooms to a similar thickness and use a wide, deep skillet. They release liquid as they cook with the onion, so let that moisture reduce before expecting browned edges. Stir occasionally, then leave the mushrooms against the pan for a short stretch rather than constantly moving them through their liquid.

The soy milk and water join after this stage. Once those liquids are in the skillet, the mushrooms will simmer in the sauce instead of browning. Keep the garlic and thyme to their short cook between those stages so they spread through the oil without spending the entire mushroom cooking time against the hot pan. Scrape up the browned bits gently as the liquid enters.

Build the sauce with beans and gnocchi

Mash a few white beans against the side of the pan before adding the gnocchi. Their soft interiors thicken the liquid while most beans remain whole. As the gnocchi simmer, stir often enough to stop them catching underneath. Stop when they are tender and the sauce coats them, checking the package if that product needs longer than the stated window.

Shelf-stable potato gnocchi is the ingredient intended here. A different refrigerated or frozen product can have different cooking directions and release a different amount of starch, so follow its label rather than assuming every gnocchi has the same timing. Cannellini and great northern beans both suit the sauce; use already cooked, drained beans in either case.

Read labels before choosing plant milk

Plain, unsweetened soy milk keeps the sauce savory. Vanilla or sweetened drinks introduce a flavor that is difficult to balance with thyme and mushrooms. Oat milk is a listed alternative, but its nutritional totals differ. Calcium fortification also varies; NIH recommends checking labels for added calcium. Gnocchi can contain eggs or dairy, so read those ingredients as carefully as the milk carton.

Let the finished skillet rest briefly before dividing it into four bowls. The sauce continues thickening, which is useful at serving time but more noticeable in chilled leftovers. Refrigerate portions promptly, keeping the sauce with the gnocchi. Loosen a portion gradually with water as it reheats and stir gently so the softened dumplings remain intact. Avoid adding a large amount of liquid before the chilled sauce has had a chance to warm and relax.
